A Couple of Briskets and some Ribs

A friend of Ours asked If I would Smoke a Couple of briskets and a rack of Ribs. As bad as hated to fire up the smoker I sad

"SURE"

He brought a couple of extra racks for me.

I wasn't planning on getting up as early as I did, But since I had to get up for a call of nature I decided to go ahead and get started.

So at 3:15 AM I punched the button on the coffee maker and fired up the smoker.

Got Both Briskets Prepped and on by 4:00 AM

I didn't do a step by step or even take a lot of pics. No sliced shots on the Brisket because I left them Wrapped and they

were no for me.

But here are a few pics

Ready to Wrap    (I use Butcher Paper)   FYI  I've been using Butcher Paper

before Franklin mad it Popular.

Looks awesome.

I am jelous of that smoker. Its like majic, meat goes in and awesome meat comes out.

Maybe its the cook thou?????????

Your buddy hasn't a clue as to just how good he has it.  If I had rolled someone out of the rack that early, well, I'd have brought along at least another brisket along in appreciation.  There's only a few things that are worth getting up at that hour for--fishing, hunting, an occasional smoke, and ...well...let's just leave that last one out since this is a family oriented website.

Any excuse to fire up the smoker is a good day!

As for getting up that early, was not intentional "Call of Nature"

I'm an early riser was planning on starting at 5:00

As for the Ribs   A little Love   I always ask everyone How you like your Ribs ? 

Sweet, Hot, Wet, Dry ?  doesn't matter to me, That rack was Spicy and Sweet

A little Brown Sugar, a little Honey A little Tony's , a little Cayenne Pepper

and Squeeze Butter

Great looking smoke as usual by Gary. Nature calls is a thing that comes with aging and not the same as when we were younger.
