Grilled Steelhead Trout

2 nice fillets i marinate like 4 hrs in some Italian dressing, Then i salt and pepper and sprinkle with garlic powder, lay out on foil, fire charcoal grill up and get it 250 to 260 range,

Then lay on grill and cook ten minutes , open grill and let some heat out, then go 10 more minutes, then open grill, let some heat out, put like 8 butter squares from a stick of butter, and use spatula to cut down to the skin and cut portions,

Then 10 more minutes and open grill, squeeze some lemon juice all over, then take spatula under fillets, and comes off skin while the skin stays stuck to the foil, and cleanup is simple with all the mess in the foil,

   this works good, if the fish has the skin on it, we grill salmon the same way,, it will smoke alot, but it will not burn at all ...

Nice! I've done the same thing with salmon, skin-down on foil and serve the meat off the skin.

Heh, salmon is cheaper with the skin on...

We have been cooking salmon and steelhead like this for a long time  ... can anyone add something ??? let me know .....

Friday night, round 3 lol. some more steelhead trout, this time, marinated 4 hrs italian dressing, spg, and tonight will be lemon pepper steelhead..

should be good, sometimes we do salmon with lemon pepper blend,  Just gettin charcoal fired up, nice 2 1/2 lb fillet ...

Where do you get Steelheads in Florida?

We don't even have them here---Gotta go to NY to catch Steelies!!!

All we got is Rainbow, Brownies, Brookies, and Lake Trout.

We buy these bear... we catch alot of snook, trout flounder and grouper here in fl.....

here is the lemon pepper version ....

Did it again tonight ........This steelhead trout is so good ... tell me what you think ... 

Right out the marinade .....

then 20 minutes in  ... with all the butter 


you cut the portions with the spatula ,,, add butter, and next 10 minutes, squeeze some lemon on it all,then here it it is .....


only thing we changed was these are the Italian cut green beans ... lol ... we love grilled fish Fridays

Just got back from fishing trip at SAM's club, caught a nice steel head trout fillet... just lit the chargriller...... and got this fillet marinated with the same,spg also... 


be back around 30 minutes or so ... when all done ... our usual I guess will be with some mac and green beans ... it is fish Friday ....
