Pulled out a couple home raised Chuck roasts from the freezer to thaw.


Unwrapped, and patted dry. Not much to trim at this point


Coated with yellow mustard and my own special SPOG with Thyme and Rosemary


In the MES with Pecan in the AMNPS. For some reason these pellets wouldn't stay lit. Brand new bag and microwaved for 4 minutes. The chip loader was pulled about 4 inches out, and then the tray out completely. Vent wide open.


When IT hit 165 a can of Dr. Pepper and some Hendersons Relish went in to braise wrapped in foil.

Removed when IT hit 190'. Any guesses whats next?
 
Thanks WW. There was quite a bit of bone and gristle in those Chuckies, so there was a lot that was trimmed out. These turned out really good, and even the Mrs loved them. My fur kids were also standing by!

I'm having a blast trying different wood/coal arrangements in the basket as well as other things with this mini. The GURU sure makes it easy no matter what I do. Talk about efficient!
