Hi, I'm new to smoking, Live in Tigard near Portland. just sold my CharBroil infrared gasser. New rec-tec mini arrived last week. Plus, I plan on installing the chimney which I ordered from rec-tec. Also got the second shelf and searing kit. First thing tried was cold smoked English Cheddar cheese using Amazen 6" smoke tube. Put tube a little too close so cheese got too warm and oily! Solved by trimming sides and dabbing with a paper towel and wrapping in Saran Wrap. Turned out yummy! Will try smoking chicken drumsticks with real Jamaican jerk seasoning! I'm nervous about cutting the hole in the body for the chimney!

Don't be afraid to ask questions. And please post up your cooks and mods you make to your smoker.

Is the stack round? If so I'd use a hole saw to make the opening in the smoker. You can find large hole saw bits up to 4"-5" at the big box stores or ACE. Larger ones at plumbing supply stores.

Before doing any layout or cutting, get yourself some blue masking tape and cover the surface you are going to be cutting through. Then you can write on it and not mess up your smoker finish. The tape will also protect the metal when sawing or drilling.

Welcome! And Congratulations on the new smoker/grill. If I were to get a pellet pooper, that Rec-Tec is the one I would want! Ill bet you are stoked! Now you just need some Pimento pellets for that Jerk. Ill think Todd has them if I remember right.
