Pops brine CSR's

I have some loin cut CSR's that I put into a modded pops brine.

I want to cook these this weekend sooo

1 gallon water
2 tablespoon cure #1
1 cup salt
2 cups brown sugar
1 teaspoon pequin peppers ground.

They should cure by the weekend.

Going to hot smoke these.



Peppers. Maybe I should add more??
 
Those peppers will add heat and flavor. Don't go all cowboy just yet. Take note of what you did this time and add more next if you need to. Pequine can over power easily if you let it.

Wife hates heat.    I just didn't know if 1 tablespoon in a gallon would make a difference.  But if 1 tablespoon cure works in a gallon, spices should too.
 
Adam I say be careful and don't let the wife try the first bite.

That is good advice, you remember a while back when I made Ghost Pepper / Mango hot sauce. I thought I had it just right,

My wife tasted it after it had been sitting and her lips and tongue went numb She was not a happy camper at all.
