Hello - thanks for the opportunity to join the community!

I am in the northwestern part of Illinois. I am new to smoking meat and I have really enjoyed trying things out.

I have a Masterbuilt 30" gas smoker.

Welcome to the site.  NW IL? Anywhere near Galena?  I'm outside of the Quad Cities closer to Geneseo.

I'm about an hour from the Quad Cities....near Sterling / Dixon area. Small world!
 
That's relatively close.  This weekend should be a good time to smoke something.

We have more than enough meat already smoked for 2 people (plus 2 packer briskets, 4-5 racks of ribs, and 3-5# butts in the freezer), so I probably try to brew a couple batches of beer instead.  I have 6 brews already kegged, a couple of cases Hefe Weizen already bottled, 1 Apple Wine/Cider fermenting (another 40-60 already bottled, an Oktoberfest Ale that needs racking to a secondary (I'll reuse the yeast and make another batch), and grain already weighed out for the O'fest Ale and a Fat Tire Clone.  I have about 200# of grain on-hand, but I'm planning on ordering another 150#.  I'm just glad the grass doesn't need mowing.  Phew!
