My annual sausage making. One of the recipes: organ sausage. Didn't get lung , spleen with my pig, but got an extra heart.

Made two recipes: arborio rice in one, coarse cornmeal in the other.

Used two types of casings: regular hog casings and hog middles. The larger hog middles make for a good roasted sausage. The thin ones we eat cold.

Cornmeal hog middles

Rice

Cornmeal (small casing)

Sliced (with headcheese)
 
I would love some of that, but I wouldn't be able to walk for a week!

When I eat that type of sausage, I have a gout flare up from Hades! Love the guts, but they hurt me bad.

However, points for the process!

Myself, oldest and youngest, are adventurous eaters and would tear that stuff up. My wife and middle girl...Fagetaboutit! Looks good...JJ
