Hello everyone,

Very nice to see such an active forum on such a great hobby to have :)

I have been smoking and curing for roughly five years now. Unfortunately I do live in a townhouse in a very urban area so I don't have the privilege of having a smokehouse (yet!).

I own a Weber kettle which I use on the weekends, and a Weber Q for quick daily grilling. All my smoking is done in the kettle (it feels like an achievement), despite the pain of maintaining temperature. Suffice to say all my smoking have been done as hot smoke.

Living in Australia means that low and slow BBQ cooking isn't all that common. Over the last three years, however, Americana have been popular and now we have more American BBQ knowledge. I am a certified KCBS BBQ judge, and I mostly did the course to inform myself of what is considered good BBQ.

Recently I've purchased the AMAZEN pellet cold smoke generator and found it excellent. I'm now trying to learn how to cold smoke better.
