I'm smoking a 7# pork shoulder right now for pulling.  I've been adding a small amount of chips to the smoker as I mop the pork.  Then 

it dawned on me that it may have been better to put a larger amount on less often.  Just curious at to what the more experienced

smokers do.  I'm using soaked whiskey chips on a propane smoker (smoke vault). Thanks ahead of time.

I use chunks in my SV, they last a lot longer, so you don't have to add so often.

With chips, just add them when the smoke stops.

I wouldn't soak them, they work better if they are dry.

Out of curiosity how many chunks roughly would you use for a 12 hour smoke?
 
I cut my own chunks with a chop saw out of wood splits.

I start with chips & chunks & this will last about 1 hour to 1 1/2, then I just add 1 chunk every 45 minutes to an hour.
