1st Pork But smoke

 

 

 

Trimmed 9ish pound pork butt, covered in rub, wrapped in plastic wrap and placed in fridge 6ish hours

 

 

 

 

 

Up at 3am getting the WSM going

 

 

 

 

 

took ~14 hours to smoke to 195deg, removed, wrapped in foil and let sit for 45min

 

 

 

Came out very good, very pleased with my 1st attempt.
