 looking for custom processor dallas county or near n. houston personal and or retail?

Go to your grocer meat cutter and tell them you want a bone-in loin cut into chops per your thickness specs for personal use.

Can't help with the wholesale/retail end, but yellow pages or online search for cutters in your area should be have lots of listings for meat processors.

Not Dallas County, but in Collin County you have Hirsch's Meat market and also Ye Ole Butcher Shop.  Both located in Plano

Both will process just about any way you want it done.  

Chef JJ is correct as well, Fiesta will sometimes work with you on cuts, but you'll need to brush up on your Spanish a bit.
