Brewster2012 here from Houston, TX.  I found this site while researching PID questions for home brewing, but I like cooking meat outside in addition to home brewing so I've become a member.

I have to admit that I don't have a proper smoker yet, and I use a smoker box on my gas grill to make do for now.  A friend is receiving a shop fabricated smoker as a gift this fall, and it's going to live at my house after he gets it.  Needless to say, I'm looking forward to it.

I've cooked more hickory smoked chicken and ribs than anything else (dad is kind enough to supply me with Tennessee hickory when he visits), but with my (friend's) new rig I plan to add beef brisket, pork shoulders, and butts to the menu!  I already have a stash of pecan wood seasoning for this fall.
