Well, here is my first cook on the new offset. Beef back ribs.
Seasoned. Salt and pepper.
1 hour in, had to peek and see how much rain was sitting in the bottom of the cooker. Only a little, but it was coming down hard for a bit there. Eeek! A tweak to the intake damper and the offset continued to chug along at 250.
2 hours in. Foil time.
I cooked them to fall off the bone since that's how everyone likes it. I was having some back problems so I did the 2-4 method I guess. 2 on smoke, 4 in foil @ 250. Very tender, great flavor. I wasn't thinking and sliced them with a bread knife. It was the first knife I grabbed and I went with it so it looks a little torn up, but hey it's tender!
I used a combination of charcoal bricks and ash wood. It was the most wonderful, and relaxing cook I've done so far. If it wasn't for the rain I probably wouldn't of even had to touch anything for 4 hours. Very impressed with the offset, very disappointed in my low back though. *ouch*.
Can't wait to fire it up again!
