SmokinAl's vacuum pickles

Started a batch of Al's vacuum pack pickles.

Used two of my vacuum tumbler canisters.

One batch is spicy one batch is not.

They sure look good so far Case!

 

I think your going to wear out those vac canisters making pickles once you try these!

I like my pickles a little stronger, so 5 days was good for me.

Just sampled both batches today. Pretty tasty but I'd like more garlic in both batches and more heat in the hot ones. Because of the cuc's I used they aren't as crisp as they could be. But that's what we get here. Very rarely do we get pickling cuc's.

Sounds like a good start.

It took me quite a few batches to get the recipe to where I wanted it.

Also make sure you store them in the brine & they will continue to pick up more flavor.

I just did another 6 lb. batch in the canisters.

If you notice the recipe calls for alum, that does the same thing & is cheaper.

Also you need to start with pickling cukes that are hard to begin with.

I did a test with pickles last year, alum and pickle crisp, there is no comparison pickle crisp one hands down

Pickle Crisp is Jarden's fancy name for food grade Calcium Chloride. Calcium chloride can be purchased cheaper than "Pickle Crisp".

Speaking of pickles, I need to give these a sample again soon! I put them up in the fridge and haven't touched them!
