Good afternoon, my name is Stan, im in the PNW (Vancouver WA) I'm a general contractor, and I have a food (push) cart that I built and use for private party's in my off time.
I'm not new to smoking I've had a pellet smoker for many many years (Treager serial #0465) that was taken apart and modified into a mass smoker(bakery rack, sheetmetal and Treager pellet hopper) for doing large amounts of meat . I am however new to offset charcoal smoking and because I have a plethora of leftover traeger parts, i'm going to try my hand at building and offset/indirect smoker. sincerely Stan.
When I can post pics I will. A stock cold smoker chamber from traeger and the old cooking chamber traeger Mary those together and try make an offset smoker. Comments and constructive suggestions welcome
