Found a 4-1/2 lb London Broil for like $13.00 at the supermarket earlier this week and decided try smoking it..
I marinated for 6 hours in a green sauce made from Cilantro, Lime Juice, Garlic, Spring Onions, salt and EVOO. I kept some of the sauce to serve as a dipping sauce at the table. Smoked it ~ 225F for about 3 hrs to an internal temp of 135F, with a sear in the cast iron skillet..
I think the Lime Juice did an excellent job of tenderizing the meat.. it was alot "looser" putting it in the smoker, than it was when I started marinating it this morning.
I think to came out a perfect medium rare.. I served it up with some Corn, Cole Slaw, Au Jus w/ Mushrooms, and Rice.
