Round 2 of the DigiQ test can be found >>HERE<<, a char siu pork butt. 

 

A little more experimentation with my new DigiQ. A much shorter smoke, using higher initial temperatures(280*) and ramping up(320*) near the end of the smoke.

 

Again, another thumbs up!!! :thumbsup:

It'll never fit in my 18.5" WSM without some modifications... :welder:

I'm going to use my knife whacking skills to make it fit on my 18.5" WSM... :duel:

 

 

The plan is brine a severed hunk, to make pastrami in a few weeks, and smoke the rest in a day or two. I just took the brisket out of the freezer at work last night and have it defrosting in the walk in. If I get the chance after the Warriors/Cavs game, I'll run down and get the party started. :yahoo:
