"Halupki"

OK Bear got me Pumped with all those great Pics of Tax Time

Halupki's Had to try some

I Found this recipe online and decided to give it a try. The only thing I'll do different next time is add more salt and pepper and maybe a little Tony's.  But they sure were good !!

Also known as stuffed cabbage on the Russian/Ukranian side of my family, is a dish made of rice, beef, and pork encased in cabbage drizzled with a thin, sweet tomato sauce. My grandma Eugenia is 98 and she taught me how to make this comfort food classic. Every family has their own twist on this traditional dish. I hope you enjoy these with mashed potatoes just as we always do in my family!"

Ingredients

·         1 head cabbage, cored

·         water to cover

·         1/4 teaspoon salt

·         1 1/2 pounds lean ground beef

·         1 1/2 pounds ground pork

·         1 1/2 cups cooked white rice

·         1/4 cup finely chopped onion

·         2 tablespoons chopped fresh parsley

·         2 eggs, slightly beaten

·         1/2 teaspoon garlic powder

·         1/2 teaspoon salt

·         1/2 teaspoon ground black pepper

·         1 (28 ounce) can tomato sauce

·         1/4 cup white vinegar

·         2 2/3 tablespoons white sugar

Directions
  1. Place the cabbage in a stockpot with enough water to cover.
  2. Add 1/4 teaspoon salt to the water and cabbage.
  3. Bring water to a boil over medium-high heat. Turn cabbage every 2-3 minutes and remove leaves that separate from cabbage and place in a strainer to cool. Boil until all the leaves have cooked, about 15 minutes.
  4. Reserve 12 oz. of cabbage water.
  5. Preheat the oven to 350 degrees F (175 degrees C).
  6. Trim thick center vein off of bottom of each cabbage leaf.
  7. In a large bowl thoroughly mix together, ground beef, ground pork, rice, chopped onion, fresh parsley, egg, garlic powder, salt, and pepper.
  8. Lightly pack a small amount of meat mixture and place in the center of the cabbage leaf.
  9. Fold sides over the filling and start at the stem and roll the cabbage up until the meat is encased. Repeat with remaining leaves and filling.
  10. Cut the leftover leaves into pieces and place into the bottom of a roasting pan.
  11. Layer the stuffed cabbage rolls over the cut leaves.
  12. In a bowl, mix the tomato sauce, reserved cabbage water, white vinegar, and white sugar.
  13. Pour the tomato sauce mixture over the cabbage rolls.
  14. Cover roasting pan with aluminum foil.
  15. Bake in preheated oven until the ground beef mixture is no longer pink in the center, about 2 1/2 hours. Baste stuffed cabbage rolls every hour.
Right out of the Oven

Mom and Mom-in-Law made them pretty much like yours. Mom used 2 cans Cambell's Tomato Soup, one can Water and MIL used a 28oz can Diced Tomatoes. Both are good, of course my Wife likes Her Mom's style better so you can guess how I make them...JJ

Hey Chef, I could make a Texas version  add Jalapenos to the meat and some BBQ sauce  instead of tomato sauce  ????

I think I will leave it alone it was pretty darn good

Gary

Love a good cabbage roll! My wife's grandmother immigrated from Austria near the Polish border, so we ate "golumpki's". Grandma taught my wife the way she did it which was to cook over the stove in a thinner broth using uncooked rice. I Could never get her to do the baked version. I tried it once as a surprise but she turned up her nose because they "didn't taste the same". (even though I thought they were much richer in  flavor) Sometimes you just don't mess with family traditions.

Barry.

Awesome Gary!

I love those things, but never had a good recipe!

Gonna try yours for sure!

If you want a No Roll version, Coarse chop a small head of Cabbage (about 8 Cups). Randomly layer all your above ingredients, except Eggs, in a Crock Pot. If you want to use Raw Rice, sub 1/2 Cup raw for cooked but add 1 Cup Beef Broth to the recipe. Cover and cook 4 Hours on High or 8 Hours on Low...It ain't Pretty but it taste the same!...JJ

Do you need your Income Tax done???

You're right about a lot of different ways:

The one lady who made them for me covered hers with Sauerkraut. I like the Tomato sauce covered better, with some thick sliced Bacon on top too.

The one Lady used Beef, Pork, and some Veal mixed in too.

They were all good, but like I said---Your's look Awesome!!

These things are easy to make and pretty quick, It all comes together pretty quick. And Good Too.

I had all the meat ingredients mixed and ready I would pull some out , roll into a little log, hand it to my wife, who rolled them up.

Hardest part was waiting for them to be done.

Gary

Hey Gary--those look delicious!!  Love Haluckis or cabbage rolls, whatever people decide to call them.  All my Ukranian friends add a lot more garlic when they make them.  I do prefer the meat and rice ones a LOT more than the all rice version.  I like the full meal deal.  Cabbage rolls, perogies, and kielbassa (koobasa where I come from).

Hey JJ.  My mom used to make that version.  They're a lot faster and easier to make.  She called them Lazy Cabbage Rolls.
