Beef Brats Recipe & Plated Shot

Seeing some threads on making Brats,I've only had Johnsonville a few times.Never cared for them,never thought I would make them.Decided to give it a shot with 4 1/2 lbs 80/20 Beef 1/2 lb. Pork fat,mixed yesterday and rested in the fridge till this morning.

 

Linking as we go

5 lbs done

Freezing them the way they are

Looking good Richie! Like you, I was never a huge fan of brats but when I had homemade for the first time I really liked them!  Great simmered in beer and then finished on the grill!

hey...there ya go.....nice batch of Brats. Agree totally on the J'villes.....WAY to much fat in there for me. Jeez, I look at them in the market and they are almost all white from fat content which is, what ?, about 25-30 grams a link. And who eats just one?.....bwahahaha.

Brats look great Richie!

 

I like to simmer in beer and thin sliced Walla Walla Sweet onions. Finish on the grill. Serve with the  onions, sauerkraut and mustard! Good stuff!

Froze and Vac Pack til we start BBQing

Kept 4 links out for dinner tonight.Cooking them like fresh Kielbasa

I was wondering if you cooked any of them.

 

I see in your last post you saved 4 out to cook.

 

We make our own all the time, Johnsonville brats are pretty good, but homemade is so much better.

Brats Recipe

 

4 1/2 lbs 80/20 ground beef
1/2 lb. pork fat ground with fine plate
1 tablespoon kosher salt
2 teaspoons ground white pepper
1 Tbspn Paprika
1 teaspoon dried marjoram
1/2 teaspoon ground caraway seed
1/2 tsp. ground coriander 
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/4 teaspoon ground ginger
1 tablespoon granulated garlic
1 teaspoon of Cure #1
1 cup of NFDM
1 cup of water that all dry goodies were dissolved in for mixing
