I have a mailbox trash can mod, was wondering what's the procedure for cold smoking jerky. Thought about 2 hours on smoke and then to the dehydrator. Assume I need cure, but more wondering on the smoke.
That should work.... Yes on the cure.... If you have 4#'s of meat use 1 pint of your jerky mix and 1 tsp. of cure #1 dissolved in the liquid jerky mix.... Soak overnight if the meat is already sliced so it can absorb the mix... rinse.... dry..... smoke for however long you feel is good... into the dehydrator..... You can apply smoke to some of the meat for 2 hours... 4 hours.... 6 hours.... 8 hours..... for a test for future reference...
