Ribs, Ribs & Ribs

Decided this would be a good day for some Rib since my Wife, her best friend,

Niece and her husband went to Canton First Monday.Picked up 3 racks

of Baby Backs and1 Spare.1 rack of the baby backs is for Char Siu.

I trimmed and cut the ribs individually,put them in a zip lock with the Char Siu

marinade for about a 14 hour rest in the fridge.The other ribs will be

smoked my usually way. Gotta do some Beans too.

I did a trial run on some Char Siu Pork the other night to see what I needed

to change or add, if anything. Glad I did, cut back on the 5 spice and added

more Sriracha and Cayenne pepper. (My first attempt on the Char Siu Ribs).

Also decided to make some Peach Ice cream for desert

The marinade

1/2 cup hoisin sauce

1/2 cup brandy (or rum or bourbon)

1/4 cup honey

1/4 cup soy sauce

2 tablespoons toasted sesame oil

4 tablespoons Sriracha

2 tablespoons powdered ginger

2 tablespoons powdered onion

1 tablespoon powdered garlic

1/4 tablespoon five spice powder

1 teaspoon red food coloring

1 teaspoon Cayenne Pepper

11:00 AM – Started warming up the Smoker

12:00 PM – Ribs out of the Fridge, pulled off membrane,

                       Cleaned them up, a little mustard and Rub

12:30 PM – Spares on, Smoker temp 225°

1:00 PM – Baby backs and Beans on

3:30 PM – Pulled Spares, Wrapped and back on

4:00 PM – Pulled Baby Backs, Wrapped and back on.

4:15 PM - Char Siu Ribs on   Pulled Beans

4:30 PM – Chicken on

5:30 PM – Pulled the spares un-wrapped and back on

6:00 PM – Pulled the Baby Backs un-wrapped and back on

                    Pulled chicken and Char Siu and put on the grill

6:45 PM – Everything is ready

7:00 PM – Started the Ice Cream (Peach)

7:30 PM – Ice Cream done and resting

Char Siu Marinade


Baby Backs cut up and waiting

Sauteing some onions and jalapenos 


Added the bacon back in


Everything in the pan, waiting their turn on the smoker


Spares  rubbed with a little Mustard

Char Siu ready ( You can cee I might have gotten a little too much Char on my Char Siu)

Everything Ready and Waiting for my wife and niece to get back from delivering

Ribs and beans to #2 son's house

I'll tell you, I sure wish I could find some nice ribs like you got.  The ones I find are sure not that good.

Thanks Gary, Much appreciated.  Sold Myself on the Char Siu too    First time for the ribs, sure won't be my last.

I said in my picture "Too much char on my Char Siu "   #2 son said No Way he loved the char said they were perfect. I thought 

I over cooked them a bit, but what do I know.
