1st real Smoke for my WSM 18.5 Pork Shoulder

Could not pass on this piece 10.5 pound pork Shoulder picnik $0.80 yes thats right 80 cents a pound.Now the weather even went in my favor started off the day, in the mid 40s.

I brined the meat over night simple brine water,salt,sugar,black pepper corns,garlic. This was boiled then cooled to 42* F

 

Brine

Used the charcoal basket from my Jumbo Joe 3 chunks of Cherry

Rinsed while waiting for the temp to come up

Temp went up to 275* so time for the meat to meet the heat

Temp dropped to just below 250* you can see I also replaced the temp. gauge

Now the boring part hrs of seeing that gauge LOL 

Nah couldn't do that to you nice people

 

So after 9 hrs here it is

another view

Rested for 30 min.

meat fell off the bone

I mean fell off

Yes dinner time Pork, Beans, Mashed Tatters

Nice job Richie! Love the way the bones came out so clean!

 

Your breaking in that WSM the right way, with a long smoke.

 

That bad boy ought to be seasoned up nice now!

It should be I played with the air vents made it hot then cooled back down. Thanks for the point

baby lima Bean soup was a fantastic tasting dinner last night

 

A nice bowl with some buttered bread

I saved some of the stock

John Thank you I know I am going to enjoy using this,I do miss my mini but the temp gauge was saved, and I took the heat deflector out it looks like I can use it instead of the Water pan.Thanks for the point I appreciate it
