You asked and here it is. White Potato Pie and Sweet Potato Biscuits

Maryland Eastern Shore White Potato Pie

DO NOT USE INSTANT POTATOES

There are other variations for this however this is my Grandmother's and what I grew up on (and believe me that was not yesterday). Some use lemon instead of vanilla.

2 Cups Mashed Potatoes

1/2 Cup Butter

2 Cups Sugar

4 Eggs Beaten

1 1/2 Teaspoons Vanilla

1 Large Can Evaporated Milk

1 Pastry Shell ( home made or purchased )

Preheat oven to 350 degrees. Cook and mash potatoes, add remaining ingredients and mix well. pour into shell. Sprinkle top with nutmeg and bake 1 hour or until tester comes out clean. Pie will puff up while baking.

Sweet Potato Biscuits

2 Level Cups of Cooked and Mashed Sweet Potatoes

3/4 Cup Sugar

2 1/4 Cup Flour

2 Teaspoons Baking Powder

1 1/4 Teaspoons Salt

5 Table Spoons Shorting  

Mix well cutting in shorting. Mix in 2 stages not all at once. Bake at 450 degrees for 20 to 30 minutes. (careful they burn easy)

Thanks for the Post. Was not expecting Vanilla but makes sense. I just saw a DDD episode with Sweet Potato Biscuits as was fixin' to do some research. Good timing...JJ
 
Honestly, I was expecting Brown Sugar and Spice. From the original mention I was figuring some Grandma had everything ready but found no Sweet Potatoes in the root cellar and said, " What the Heck..." and substituted Regular White Potatoes. Seeing Vanilla or Lemon as the flavor. I am thinking sweet potatoes as a Southern US creation and white potatoes in pie as having a Northern US or European origin...JJ
 
Not sure of the locality of its origin but you will basically only find it on the eastern shore of Md. Maybe this will help it was most made by the slaves cooking for masters. It was predominate in black communities. However it is in my book a great tasting pie.

Hey Warren  I made the white potato pie, with a couple of small changes.  I substituted one cup of brown sugar for one of the cups of white sugar, and I increased the vanilla by 50% (seems like I like more vanilla than a lot of folk).  The first night we ate it at room temp (I baked it in the afternoon).  I wasn't happy with it cold--it was just too thick and the texture felt wrong.  The next night, we had it worm, with ice cream--DELICIOUS!!  Heating it totally changed the texture from heavy to quite light.  Its a very tasty pie and I'll be making it again, but both Miss Linda and I do prefer the sweet potato pie.  

I'm guessing you used a deep dish pie shell.  I just used a regular one and ended up with 2 pies and a small bowl of "pudding".  Worked out fine.  This was we get an extra 4 pieces to eat.

POINTS for a great recipe.

Thanks for the point Gary there are more variations to this pie for sure, My wife's aunt separates the eggs and whips and folds in the whites last may make it lighter not sure. But you enjoyed it just watch that waist line I got mine right out front where I can see it LOL.

Warren, I'm lucky.  I have an extremely high metabolism--I burn as many calories chewing my food as I gain eating it..  LOL I couldn't gain a  pound to save my life.  Miss Linda, on the other hand is always going on a diet or coming off one.
