The other day I surpassed Scarbelly in forum posts. I figured in order to honor that feat I better smoke one of his favorite things, Scarbelly Wings.

I picked up a pack of whole wings. I'm a bit disappointed with the wings the drummy portions are really small and almost no meat on them. If I hadn't already injected a few I would have taken them back.

Injected with beer, Frank's, and creole butter. Rubbed with garlic powder, pepper, and chipotle. Placed the wings in the vacuum tumbler canister and sucked the air out. I did not tumble as I've found the tumbling removes the skin. Marinated in the canister for 16 hours.

In the mini-WSM high temp, running KBB and apple wood.

Watching. I have had my tumbler for 3 weeks and haven't used it yet.
 
Looking good Case. Do you vacuum your marinades very much, should I be looking at a container? I've got the nose, and the hose too! LOL

Yes I do vacuum marinade often. Especially when times tight. Quite often I see something good at the store after work and only have a couple hours to marinate and get the food on the plates. It does make a big difference. I have several canisters I can use with the new vac packer too.
