-15 and cooking a butt

Cooking a 9 pound butt for a friend who is going snowmobiling today. When I started fire at 6AM the outside temp was right about -15, depending on which weather guy got it right. The snake is Stubb's charcoal started with a chimney of fully lit lump, I'm using black cherry for smoke. The butt was on by 7, I am shooting for a cook temp of 325°-350°. With steady temps I should be done some time between 2 and 3 this afternoon.

It's going to be a bright, sunny day with a daytime high of 23°, Heat Wave

I am also cooking a small beef roast for burnt ends for tonight's supper, I'll post that one as well.

As someone addicted to smoking enough to smoke in any weather i respect anyone to smoke in adverse conditions!

Sounds like fun! We're in the middle of a heat wave on the Left Coast. Was 50° when I got up this morning @ 5 am. Was 20° a week ago!

Sounds Great, Cliff !!

I can get mine to bump 300°, but it will always level out at the 275° MAX.

We're having our warmest Winter ever this year, getting down to 1° yesterday was our coldest so far. 13° right now here.

Looks like a great start. I can't even imagine going outside in those temps, much less to smoke a butt.

That's dedication!!

Weather is OK here today, mid 70's, but cloudy & windy.

Wanted to cook this one around 300°-325° but whenever I shut the intake down the temp dropped to 280° or so. So I ended up leaving it about 1/2 open and the temp settled in around 360°

, oh well. The upshot is this butt is going to take just about 5 hours of cook time.




I could probably pull it now, but I've got to pick up my wife in 30 minutes or so, so I'll close the vents and keep it on the kettle until I get back.

5 hours in and it's done, note the differing temps depending on where the thermometer is placed-

There was a good bit of charcoal left in the kettle so I added more and 3 chunks of apple and put on the roast for burnt ends


Should be done in 4 hours or so..... maybe sooner considering how fast the butt was done

Wow. Looks great. Never cooked that cold before. I have done -5 with a wind chill.

POINTS FOR SURE.
 
You're a better man than me. I ate burnt ends out of my freezer it was -25 here. I'm even burning firewood from inside, nuts to that.

-25 Sunday morning and Sat. too tomorrow they say it will be 40 degrees and raining. Go figure. 

Anyway great looking cook. I'm gonna smoke something tomorrow.
