Hello, My name is JT. I am new to smoking. My wife purchased the MES 30' elite for me for Christmas. I have two smokes under my belt. First was a little over 8 lb Boston butt. Smoke low and slow for 13 hours and pulled apart nicely. Made some great Que. Second was some sweet and spicy wings. Also turned out nicely. I grew up in NC in Wilkes county and the BBQ I grew up on was traditional NC pulled chopped vinegar based. I heard from a friend that this forum was full of useful and helpful information. Thanks for having me.
 
Welcome from SC, JT. This is a great site and there are lots of really good folks here who are always eager to share their ideas and tips. All you have to do is ask and keep reading.

If you're from Wilkes County, you're not supposed to be making BBQ. You're supposed to be making shine. You know, it naturally goes together.
