Hello all. Thanks you so much for the wealth of knowledge here on the forums. I recently bought an MES 30 smoker after trying my hand at a little smoking on a propane grill. I'm just getting started and have a lot to learn. I live north of Birmingham Alabama. My first attempt was some chicken breasts wrapped in bacon. I used a little applewood for smoke. Turned out mighty tasty! My family ate it all. Planning on trying a butt tommorow. I look forward to getting to know y'all. Cheers, Derek.

i have used the MES for many years . just remember a butt will need around 1.5 hours per lb.

you will need to add a palm full of chips around every 45 min.

Look into buying the AMNPS from amazing products ( site sponsor).

with a full load of pellets you can get 8 - 10 hrs of perfect smoke without having to add more pellets .

 I smoke butts and briskets while sleeping.  Put it on at 5 pm after work and use a full load of pellets and check it when i get up the next AM. 99% of the time it's done by 7 am.
