New to the forum, how should I christen new MES 30"?

Hello everyone, I recently joined the forum after stumbling upon it and reading such great advice from everyone. I just received an MES 30" as a gift so i'm excited to get it smoking. I have been smoking for awhile with charcoal and will continue to, but it is awesome to have another option. Any suggestions on what I should throw in the MES for opening night?

 Sorry i missed this post yesterday.

anything you can smoke over charcoal you can smoke in the MES. Just remember that the MES does not get hot enough to crisp up the skin on chicken. you will need to have a secondary method to crisp it.

Try smoking some wings and then flash frying them at 375 degrees for 2-3 min.

Everyone always says chicken, or pork butt. How about a chuck roast, or if you're more into slicing a eye round roast. Throw in a batch of Smokey Au Jus and make some great sandwees!
