Smoked my second try art Baby Back ribs today....came out, in my mind just OK....however the family loved them...Wish I had more leftovers for me now.  I used the 2-2-1 method for baby backs.  Tenderness and moistness were perfect.  I just think that I need a little more smoke flavor in them.  Have to figure out how to get more smoke in my MES 30"....suggestions?  I have tried soaking the chips on different occasions but it did not seem to make a difference over just dry chips.

I'm really starting to l like this smoking business.
 
They look tasty, nice smoke! One thing you could do is skip the foil. I like to do ribs "naked". They take about the same amount of time as doing the 2-2-1 method.

In your MES 30 you could use an AMNPS, from Todd at Amaze N Smokers. You will not want to use the AMNTS (tube smoker). It produces more smoke than you'd want in the MES 30. There are a bunch of threads here on using the AMNPS in the MES. Use the search feature here to find them.
