Deviled eggs 1st attempt

Just about 1.5 hours in a cold smoke never above 45 degrees.

They were good but I think I prefer not smoked deviled eggs.

I made smoked egg salad sandwiches last weekend. I only smoked the eggs for 45 minutes.  I tried one of the eggs right out of the smoker and it tasted awful.  I decided to refrigerated them over night to see if the flavor mellowed.  I'm glad I let them rest.  Ended up the best egg salad I've ever had.

X2 on resting, mellowing.

I cold smoke my hardboiled/peeled eggs for 1 1/2 hrs using my amnts and mailbox mod on my vertical propane smoker (gas off).
I always let my eggs mellow out in the fridge a day or two before making deviled eggs or egg salad. Love smoked egg salad. drool.gif
