Willies Texas Hot links tuned into Snack sticks & Jap Sticks

So I seen Reinhards post the last week on Willies hot links and thought them would be good as a snack stick so here it goes,, I doubled his recipe and made 10lbs of 80/20beef from the freezer.... These will be going to Hunting camp next week. 

 

:781:

 

5 pounds pork butt

12 oz of good beer

2 T black pepper

2 T crushed red pepper

2 T cayenne

2 T papricka

3 T kosher salt

2 T mustard seeds

1/4 cup diced garlic

1 tsp cure #1

1 cup dry'd powdered milk

 

here are the players 

 

 

Powdered milk and Mustard seeds laid out on the beef 

 

 

Beer before cure was added 

 

 

 Beer after Cure # 1 was added look at that foam!!! 

 

 

The rest of the players getting all funky 

 

 

all mixed in and let set for a few minutes before adding to the meat 

 

 

All mixed in 

 

 

Next 10lb batch - I love this flavor 

 

 

 

added beer to this one also, I usually do water but thought what the heck,, I added 10oz drank the other 2 LOL then had to go find more cause they tasted SO GOOD cheers.gif

 

 

All mixed up, this sat in the fridge while we were stuffing the first batch and boy was it mixed good when we mixed it into the meat.

 

 

 

Stuffing into 21MM Mahogany casings 

 

 

 

Did not want to start another strand so Found a piece of 19mm but it was brittle and blew out, then I made a caseless log out of the bottom of the LEM Stuffer 

 

 

The above pic you can see I only had two blow outs on the Mahogany casing 

 

 

In the smoker at 130 for 2hrs then I will bump 10* each hour till Smoker temp gets to 170 and IT gets to 152*  That Probe I am using just to double check smoker temp 

 

FULL SMOKER TODAY ON LABOR DAY

Lookin great DS, them are gonna be tasty ! I know Willies recipe is tasty, but have you done them jap sticks before ? Might have to try that someday soon ! A couple cold ones & a smoker are just meant to be together... LOL. biggrin.gif

WHB I have done the Jap sticks many times, this one has a hint of some Mex/taco seasoning in it and man is it ever good 

 

Yep going to mow the yard  and kick back and watch Mariners today and have a cold one(s) as I wait for the sticks to get done.

B thanks, I should have been hunting this weekend it was nice and cool they should be bugling full time now, Did not go cause had a niece get married.

First off, I would like to say that I hope everyone had a safe and fun Labor Day weekend.

Below are the Jalapeno Snack Sticks - both are awesome!! 

 

 

Sorry for the bad pics, I Just gave one to a guinea pig  Oops.gif I meant co-worker some,,,,,,,and he like the Jap sticks and then he tried the Texas hot links and had to grab a water and his eyes teared up:icon_cry: :sausage: that means job well done. He is one of the guys that always runs around sayin he can eat anything hot.76.gif ( he only had one)

Nope,,,, Had one bugling right behind camper from 7:30 at night till 3 in the morning, he would bugle every 15 - 30mins or so, So being the tired hunter that morning, I went right out at dawn and do you think he would talk?? Dang them man,,,,:th_crybaby2: No sign or anything like up and vanished, but he will be there next weekend and hope to have some cloud cover so he can come and play with me in the daylight. Seen some nice rubs thou. Hope to have Elk sticks soon.

Yes sir even thou my hunting buddy could not make it this time I had a great time 

 

 

 

Some for the company and maybe after dinner drink

Spuds and onions in the tin foil with some butter and salt and pepper

 

 

Plated up 

 

 

 

Dinner is done - kicked back enjoying the night air. 

 

 

 

No complaints on the dinner since I was the only one here LOL

Btw, where do you buy your casings at?  What kind are they?  

 

I've just bought the LEM collagen casings, but they don't have the strings at the ends.
