I remember my dad smoking bacon and hams in a smoker he made from an old wooden barrel back in the 1950's. Now I'm retiring from a career as an IT consultant and finding more time to do some smoking of my own. I've modified my WSM to do everything from cold smoking cheese to searing a steak, as well as the slow smoking it was intended to do. (I'm not sure of your policies around mentioning my own project but I'm sure the moderators will let me know.)
