Long time grilling novice here. Went from charcoal and wood Webbers to high end gas with wood chip infusion. Really thought I knew everything there was about grilling. I had very good results and have been thrilling family and guests for decades, But, alas, I was a fraud...I never learned to smoke, and was too embarrassed to ask my friends that did how the heck to pull it off. So I humbly asked a good friend what direction should I go? Should I go electric? How about Pellet feed? How about side box? Yep I was obviously a person that read a lot but did not really have a clue what to do.
My main fear with using any type of wood or charcoal was that I would lose the finite control of the heat and would torch our meat. Oh the horror..So My friend said to step up and buy the Webber and I have.
I will now try to learn how to use it to a small percentage of it's vast and various abilities.
