I have 2 pork shoulders with rub on waiting to go on my Weber OTG to smoke. I have done this several times before with good results. I built a ring around ~80% of the coals grate stacking Kingsford blue next to each other. I place wood chunks at intervals on top of the charcoal and watch my temps and try to control them with the dampers.

Before I do this again, I wanted to read the posts about this charcoal weave method to be certain I remember it correctly. I want a low and slow smoke.

Thanks in advance for any help. My search foo got me nowhere.
