Super hot here today temps will be in the 90s*.Took advantage of the 80* morning and fired up the Jumbo Joe,brined the bird over night. just used olive oil on it,then into the smoker at 7:30 A.M. smoking with Apple and Royal Oak Lump.

use 18 Trader Joes Charcoal for the start,took 35 mins to get up to 275*
3 hours later it was still sitting there.
Pulled the bird at 175*
