Hey everyone!  Finally decided to make an account here after lurking for quite some time.  I've been attempting to make some tasty treats on a hand me down brinkmann smoke n grill.  That thing led to quite a bit of cursing and frustration on my part.  My wife finally got sick of me whining about the darn thing and seeing me drill holes and constantly trying to tinker with it  She surprised me last weekend by buying me a 18.5 inch WSM!  I consider myself lucky to learn on such a piece of garbage though because I did get some good results off of it.  

As I'm typing this I have my new toy fired up... unfortunately without food since we have dinner plans and I just wanted to get any oil burned off and get used to temp control.  I was worried about it running hot as many people have warned, but I've had it running steady at 235-245 for a couple hours now.  Needless to say I'm real happy :-)

Anyway, like the title says, I'm from Milwaukee and I'm looking forward to filling my neighborhood with the wonderful aromas of various smoked meats.

Welcome to the forum!  Did you have water in the pan?  My WSM ran a bit hot until it had some soot coating the shiny newness.  Yesterday, it stayed between 225 and 250 for over 16 hours!  It was about 100 deg outside so that was a contributing factor.

I did have water in the pan.  I think I might run it like that until I get it "seasoned" and then change over to a different, waterless, heat deflector.  I definitely don't want to have to deal with that nasty water for too long.  
 
I used water for the first two or three smokes, now I just foil the water pan and use it as a heat deflector.  I really hated that "nasty" water.
