Hey all, new here and to smoking/bbq in general. So I picked up some ribs that looked meatier that what I have done in the past. Got them home, smoked them and found one side was full of these small bones. I'm just wondering what the are and if they are normally trimmed out.
BTW, this site is a great resource for people like me just starting out.
 
I'm wondering if the ones you had in the past were already "St Louis Cut", and these are the Full Pork Spares (untrimmed).

Look like part of the backbone....

That's what I was thinking. Even if they were untrimmed, shouldn't have had part of the backbone correct? Either way, last time I get Hormel. Way to fatty/greasy for me.
