Off work for the holiday today so picked up 2 slabs of St. Louis cut spares.


Quick trimming and removed membrane.  I was lazy today and tried out a commercial rub - Famous Dave's Rib Rub.


Currently on the WSM at 235 (in the rain) for 1.5 hours with cherry and pecan.  Not planning on wrapping but will spritz with Apple Juice in a few.

Hah!  No worries JC.  I will let you know on the rub, few more hours to go.  Probably also using some of Jeff's sauce I have made up.
 
Mmmm jeffs sauce is the best sauce i have ever had IMO... before i purchased jeffs rubs i used Mc Cormics Applewood rub and the Sweet & smokey one as well... i liked them both ok but the applewood was the best

Can't go wrong with Jeff's rub and sauce.  They are both my go to but change it up now and then.  Tatonka Dust is another fav.
 
3 hours in, just threw 4 potatoes on the lower rack rubbed with EVOO and Kosher.  Will probably do twice baked for a side to the ribs.
 
Here are the final picks, turned out great!  I could tell the rub was a little saltier than normal but that is to be expected with a commercial rub.  No complaints on my end - the kids sound like they prefer the baby backs.
