Got my new temp dial installed this morning before putting on the Pernil.

 

 

 

PR, Pernil. The pork has been in a 4 day PR marinade.

Took the pernil to 200*

 

Shank bone pulled right out and meat pulled easy. I love the bbq chicharron from the top.

Nice Pernil Rick, I still haven't made one yet but they are great tasting IMHO.. Yours looks great
