We're glad to have you. The search bar at the top is your most valuable resource here. This forum has been around for over ten years, so there is a good chance that any questions you may have, have already been answered (they may have 10 different answers, but you'll get an instant response non the less).
Please be sure to post your smokes along with your process and recipes. We will be glad to help you along the way and we may also learn something new ourselves in the process. Also, don't forget the very important Q view! (We're mad for pics on here 😁)

Welcome from SC, Mitch. I'm sure you will enjoy this site. Lots of folks sheer with tons of knowledge who are always ready to share ideas, tips, recipes or anything else that you may need. All you have to do is ask. I sure hope you can get back to a better location soon. I know you must be miserable having to wake up every day on Oahu. What a crappy to live. I think I've decided on purchasing the oklahoma joe highlander, it will need a few mods which I've researched. It should be fairly easy to get it the way i'd like it. I'll post pics when I get it

Welcome to the forum Mitch! Thank you for your service! Enjoy your new smoker when you get it, and we'll be looking forward to the Qview. I worked on Oahu for 6 months back in the 90's. Really beautiful there, loved hiking in the mountains! Happy smokin', David.

I bought the oaklahoma joe highlander, currently smoking a 15 lb brisket. Kingsford charcoal mesquite wood chunks. I'm 14 hours into it at about 225 (hard to keep it stable, definitely need to deal it) everything was going fairly well but I'm starting to lose the 'tbs' going more to a white and at times thick white smoke. Is it because the charcoal is creating to much ash ruining the air flow?

Charcoal doesn't seem to be keeping temp up high enough. The wood does just fine though

Kingsford will produce a lot of ash. Keep ash knocked down and maintain good air space under coal grate for proper air flow so you don't choke out. Good luck on your cook. Thanks for your service.

I think on the next one I'll try lump charcoal.

I like to use lump to get a good bed of coals started with a chimney of briqs. When the lump is going good, I put in a couple of splits and go with wood from there.

Don't know what's available there, but there's charcoal briquets that produce alot less ash such as Stubbs, Royal Oak. You can get reviews of briquets and lump at There's some members on here from the islands, maybe they can chime in on what's available. Enjoy your day.
