And you can throw your jabs, left hooks, and jibes at me. I wear big boy clothes and don't cry over spilt milk, although I have shed a tear or two over spilled beer and other tasty beverages. 


I've been visiting Smoking Meat Forums for several years.. in fact, probably all nine  years you've been here. Mostly stuff about adjusting the heat and that sort of thing. 

I have been doing without a smoker for about 3 months. The firebox burned out. Holes in it. I was ok with it, but the neighbors were nervous.  I wound up here looking for the mods on the Oklahoma Joe. They worked great, but I do think I'll upgrade in a year or so, or immediately after I buy my wife a new car. 


The picture below is from this weekend.  I did two different styles of ribs (plus chicken, salmon, and a few hot dogs).  The one in the foreground is my regular flavor... recipe here : Potato Chip Sandwich Dot Com. The one in the background is a Mango Ginger Habenero Sauce flavor. This was my first stab at it...and it's really good.  I used Fischer and Weiser brand sauce...and I recommend it. 


Since this was my first time using THIS grill, there were some things I learned.  The main lesson was that it takes more charcoal than my old smoker. the fire went to 180 twice during the 12 hour smoke time, so they weren't quite as tender as usual. They were still great though.

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
