I figured with a 8 lb picnic pork shoulder I would be looking at about 16 hours to compleat but it turned out to be more like 20 hours. I started it last night at midnight. Finished on the smoker at 7pm today.
After 8 hours I checked IT @ 165 so keep letting it cook.
Later on I checked it again with an IT @178 I decided to wrap it in foil and add some liquid to help it cook. Finally done I ended with an IT of 198. I stopped here because when I touched the meat it was falling apart. Let it rest then pulled it and the bones came out easy and clean.
Before I served the pork I combined it with my homemade BBQ ketchup based sauce.
