Got a Little Chief Model 9900 and am eager to smoke some apple wood

Hi fellow smokers,

 

A friend of mine gave me his Little Chief Model 9900 smoker (see http://i.imgur.com/hQDM5Hs.jpg for a pic of the box) and I'm eager to get started on smoking.  Now, as I figure, the manufacturer wants you to buy and use their pellets.  But, I have an old apple tree that fell in my back yard and I've chopped up the wood into logs.  I want to know if I can make use of that apple wood in this little smoker by just cutting the wood into small enough pieces. Is this totally out of the question with this type of smoker, and I must use the pellets?

Welcome, bgoodr. I also got a little chief second-hand - for $15.00 a few weeks ago.

SAVE THE BOX.... for insulating the smoker in cold weather... just slide it over the smoker from the top....

I use what I call "cookies".... slabs cut from a branch or the tree.... they can be from any fruitwood or hardwood tree... I use alder for salmon.....

DO NOT put 2 cookies in the pan.... It take 2 pieces of wood to build a fire.... I have seen 2 chunks burn up all the meat and melt the inside of a smoker....

My second smoking session with salmon and pork loin went very well.  I found that covering the smoker with a box keeps the wind off it and the temp up.

This forum has been around for over ten years, so there is a good chance that any questions you may have, have already been answered (they may have 10 different answers, but you'll get an instant response non the less).

Thanks mymeatsonfire (nice username :) )  I'll see if this smoker can take cookies.

 

I had a friend that says that I will need to soak the wood overnight. Haven't tried it yet but probably will next weekend.

I don't soak wood.... most folks don't... It just adds extra time before the smoke starts, and if you have formed a pellicle, the steam can dissolve it .... Just use plain dry wood.... you will be better off...
