One five pound chub of plain summer sausage. One 3 pound chub of Jalapeno Summer sausage. Been in the smoker since earlier this morning. Smoker is up to the final temp.

 
Looks good.  Are you using 3 igrill minis or some other set up that can work with 3 temp probes?

I'll hang these in the garage overnight (it's 38-40 degrees in there this time of year) and probably slice into them tomorrow evening. Portion out and vac pack.
 
Long smoke! 3# was finished at 10 hours. The 5# chub finished 2 hours after that! All hanging in the garage. I didn't do the cold water bath to shock. So these are gonna be shrivelly.
 
Can't wait to see the prize inside Case ! That's gonna be some good eats ! Thumbs Up
