Seasoning new MES30...first smoke tomorrow!

Just started the three hour season on the new MES30. Never smoked (meat) before and am excited to get at it...why not have yet another hobby?

I'm sitting here contemplating what I should start with...chicken, pork chops, pulled pork, roll a fatty, that venison roast in the freezer from 2012? Suggestions anyone?

Chicken is cheap and easy, and pretty quick
