35 minutes of cold smoke gives a pleasant hint of smoke when you sear the steak   in the house. next time i'll do an hour because i like a stronger smoke taste than many.

the heat is holding steady in the 140s n the maze is smoking away.

 

with  the maze n the maverick, it looks like i won't have to go outside til after my morning coffee. i'll try to post pics if the weather cooperates in the morn.
