My first. Using home made rub, glazed with honey, molasses, soy sauce, orange juice.

Cooking at 325 with hickory.

Duck! One of my most favorites!

 

BTW beautifully done, the meat could grace any cookbook. Its so hard to smoke without making them tuff.
