I was so happy with my recipe I used last weekend for meat balls, I used it again to make a couple of meat loaves to eat on this week. But here is the recipe again:
2 pounds ground beef
4 ounces cheddar cheese, shredded
1/3 cup low carb ketchup
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
1 teaspoon dried cilantro, or 2 tablespoons fresh
1 teaspoon salt, or to taste
1/2 teaspoon pepper, or to taste
It went really well. I mixed six pounds of meat (3 lbs 73/27...3 lbs ground pork). I made two meat loaves and froze one portion of the batch for a later smoke.

After 90 minutes on the smoker, I elected to take them off and finish in the oven. It was just so windy, I was nervous about the smoker running on our deck.
This recipe makes lots of juices and mess. I set the loaves on foil while in the smoker, and then put them on a cookie sheet in the oven. The bottoms did get a little soggy, so the next time I will probably put directly on the racks with a catch pan.
Off the pan and onto plates to get out of the mess for slicing.
Managed to get some smoke in it even with the short time on the smoker.
I vacuum sealed one loaf to freeze, and sliced the other for eating on this week.
When I ate the meatballs from this recipe last week, I used hickory flavored sugar free BBQ sauce, garnished with roasted pueblo chilies. A great flavor combination.
