Holy Wa ! You had me goin' for half a second on the PT wood !
I was stunned that someone could make smoked sausage for 21 years, build such an awesome smoker and not die from the PT wood. Everything's looking great and thanks for sharing. I'm an old hand at jerky but having a go at my first venison summer sausages goin' in the smoker on my next day off. They're in their skins and waiting, calling me ..... or is that just the voices in my head. Cheers
