Well, I plan on doing a lot of snack sticks this yr so I went ahead and bought a caddie of 21MM Mahogany collagen casings. Not the best deal but it will work. I got 35 strands that will hold approx 370lbs of meat for $116.00 + Shipping I just hope they turn out to be good ones. I ordered these from Butcher & Packer and have had good results in the past with their casings.
Also bought some Hi Temp Lava cheese that has Jap and habs in it
Went to PS Seasonings and bought Habanaro Snack stick seasonings and the Chipotle Wildfire Snack Stick seasonings. That I will mix both with the hi temp cheese, this will be done after the first of the yr.
