Just ordered

Well, I plan on doing a lot of snack sticks this yr so I went ahead and bought a caddie of 21MM Mahogany collagen casings. Not the best deal but it will work. I got 35 strands that will hold approx 370lbs of meat for $116.00 + Shipping I just hope they turn out to be good ones. I ordered these from Butcher & Packer and have had good results in the past with their casings. 

 

Also bought some Hi Temp Lava cheese that has Jap and habs in it 

 

Then

 

Went to PS Seasonings and bought Habanaro Snack stick seasonings and the Chipotle Wildfire Snack Stick seasonings. That I will mix both with the hi temp cheese,:th_violent5: this will be done after the first of the yr. 

 

Wish me luck and I will post pics when my nogin is on fire. LOL

Sounds to me like you have jumped into the sausage arena head first.

Those seasons sound good but I think your going to need something cold to go with them!

Thanks Mule, yep been doing a lot of sausage here on SMF over the past couple of years and posting, without SMF help I would still be buying them from the store. :th_crybaby2: and that would not be cool.

DS........I use those same seasonings and love them. I haven't tried to mix them yet. And I also like those casings. With a few of those cold one's you will be good to go......

Holy moly! Sounds like you're gonna need a box or two of those stones! Lava Cheese, that brings a whole new meaning to High temp cheese!

Sir Dried of Stick, I shall be watching closely!

Snack sticks are my favorite thing to make, and they are so much fun (not) to stuff! However, the finished product is almost worth a song!

Did you order a tube for the skinny casings?
